“From Cocoa Tree to Chocolate”. Master Chocolatier
Dan Durig demonstrates the art of chocolate-making in his workshop, and
selects a variety of chocolates of different origins from around the world
for you to taste.
The Cocoa Bean
The cocoa bean is the essential ingredient of chocolate and this introduction
deals with the fruit itself:
- The unusually shaped cocoa fruit in its natural state, its geographical
origins and the different types of cocoa beans available – Criollos,
Foresteros and Trinitarios.
- The history of the cocoa bean (and a taste of cocoa as it was originally
consumed by the Mayas and Aztecs).
Making Chocolates
Here we demonstrate the various techniques required to produce individual
chocolates:
- Preparing fillings: truffle, praline, ganache, nuts and liqueurs (Whisky,
Cognac, Grand Marnier etc.)
- Producing different shapes: pouring chocolate into moulds
to make bears etc.
Tasting Session
Visitors now have the opportunity to sample a selection of chocolates
made from different cocoa bean varieties and cocoa strengths. This tasting
session demonstrates the huge variety of possible chocolate flavours.
A typical selection of chocolate types includes the following:
- Cuba (70% cocoa content), Madagascar (64%), Venezuela
(56%)

buy gifts to take home. Although there is no obligation to buy, Chocolaterie
